We coated this beautiful 16oz Spinalis heavily with Shiitake Steak Rub.
Grill it hot-and-fast over a screaming bed of Springbok Braai lump charcoal with a Hickory @drkstenncans buried in it.
We flipped the steak every 20-30 seconds until the IT hit 130°.
