Cubano Blue Cheese


Ingredients

  • 1/2 cup Duke‘s Mayonnaise

  • 1/2 cup Sour Cream

  • 1-2 Tablespoon Lane’s Cubano Rub (to taste) - Salt, pepper, and/or garlic can be substituted, or your favorite seasoning/rub.

  • Juice of 1/2 a Lemon

  • Buttermilk (the amount depends on how thick/thin you want the dressing)

  • 4-6oz of Blue Cheese Crumbles, or more (to taste)


Cook

  1. In a mixer or blender, or bowl, combine the Duke’s, Sour Cream, and approximately half of the Blue Cheese Crumbles.

  2. Mix/blend until smooth. We are trying to break down the crumbles!

  3. Add the lemon juice and Cubano and pulse to combine.

  4. At this point, we move the mixture to a bowl, but you could leave everything in the mixer or blender. If you do leave it in the mixer/blender, pulse when we mix below.

  5. Slowly start to add the Buttermilk, mixing well after each addition. Add as much, or as little, as you need to gain the consistency you want. We like it thicker when we serve it with wings and thinner when we put it on a wedge salad.

  6. Once you get the consistency you like, add the parsley and the remaining Blue Cheese crumbles and mix well.

  7. Adjust for seasoning.
